As an extrovert, ENTP, for those who know ENTPs, youyou’llready know that I diddidn’tllow the recipe exactly. I’mI’mone to changing things whenever possible, and baking is no exception.

Cranberry Bread The Original Recipe
Here is the recipe I used from Food.com, which I loved because it’it’smple, makes two loaves of bread, and serves 12. WAHOO! My personality type is about making things simpler, taking whawhat’snventional, and reinventing it. Most of us think our personalities are the roadmaps for our careers, but our personalities are ingrained in everything we do, even baking. So herhere’se original recipe:
2 cups fresh cranberries or 2 cups frozen cranberries
1/2/3 cups of sugar
2/3 cups of vegetable oil
1/2 cup of milk
2 teaspoons of crated lemons or grated orange rind
2 teaspoons vanilla
4 eggs
3 cups all-purpose flour
1/2 cup coarsely chopped walnuts or pecans
4 teaspoons of baking powder (dondon’te baking soda; I’vI’vene this before with disastrous results)
1 teaspoon salt
Directions
Heat over to 350•
Grease bottoms of 2 loaf pans: 9 x 5 x 3 inches
First mix cranberries, sugar, oil, milk, vanilla, eggs, and lemon/orange peel in a large bowl, then stir in the remaining ingredients.
Bake 50 – 6- minutes. A quick test if you insert a toothpick and it comes out clean, youyou’reod to go. Let cool for ten minutes.
Loosen sides of loaves from pans, and remove.
Let cool down before slicing or wrap and refrigerate for a week or wrap and freeze for a month.
My Take On Baking Cranberry Bread
The recipe calls for two cups of chopped cranberries; since I was making ten loaves, I decided to let my Ninja blender do the chopping. It worked like a charm.
I used two cups of sugar instead of measuring out 1 2/3 cups – easier… and since this is breakfast, bread a little bit sweeter with coffee, delicious.
I opted to skip grating lemon or orange rinds —too much work. Instead, I squeezed a teaspoon of lemon juice or a teaspoon of orange juice into the batter. I’mI’messed to have fresh oranges and lemons in my neighborhood, so I used fresh picket citrus, just the juice, not the skin or pulp. I baked a random number of lemon-infused bread, and the rest were orange-infused. Typical for an ENFP!
To chop the walnuts/pecans, I used my Ninja blender, put her on pulse, and, voila, chopped walnuts.
I purchased reusable tins from Walmart as the loaves were for gift giving. My thinking, if someone wants to reheat on low, they can easily pop it into the oven without getting a pan dirty.
The recipe suggested greasing the pan bottoms. I greased the bottom and the sides with salted butter, which I used sparingly. I was told by a chef-friend that when baking, reach for butter. It’It’sways more flavorful than oils.
